The purpose of Living Without Milk is to help parents understand and cope with milk allergies their children might have. Further, this site provides information about lactose intolerance and contains an abundance of non-dairy cooking information. Milk allergies and lactose intolerance pose not only serious health threats, but also cullinary dilemas. With casein, one of the proteins in milk, and also the primary substance of milk protein allergy, being used as an additive in thousands of food products, it can be a real struggle to create pallatable meals that are also safe for someone suffering from milk allergy or intolerance to eat. Though millions of adults have milk allergies or suffer from lactose intolerance, children seem to be the most at risk. Children rely on adults for their meals. Children are generally not "label-readers". Children tend to be finniky eaters and will probably complain if they don't like the taste of what they are eating.

Though caesin is the most recognized cause of dairy related problems, butterfat is another common allergin in cows milk. It is mainly comprised of the glycorides of the oleic, stearic, and palmitic acids. Butterfat is usually found in milk, cheese, butter, creams, and frozen deserts. However, there are other commercial products that contain butterfat as an addative. Butterfat and casein are ingredients that make foods have a smooth or rich taste... so it is easy to see why manufacturers find it desireable to use them as additives.

Knowing what is safe for a milk-allergic child to eat is difficult enough by itself. Knowing how to create pallatable meals that are dairy-free can be a daunting challenge indeed. The information found on this site is universal for adults and children with milk allergies or lactose intolerance. Even so, I am particularily interested in providing this information to help your kids who may be allergic to milk.  I have a serious allergy, and I know how it is to be a kid and not allowed to have an ice cream cone with the other children.  There are so many food products that contain dairy products, that they are hard to avoid. It is hard for a youngster to be considered different by the other children because they have to eat differently than the others. It was certainly difficult for me. 

Today, I am a man who enjoys good food. My health is much improved and I even occasionally indulge in a small scoop of ice cream. I am healthy today because of my mother, the author of the No Moo Cookbook. It was a real act of love for her to change everything my family ate and design meals that tasted great but were safe for me.
